CARDAMOM CITRUS FRUIT SALAD
from Simply Recipes
1 large ruby pink grapefruit
3 navel oranges or a combination of naval oranges, blood oranges, mandarin oranges and/or tangerines
1/4 cup honey
2 Tbsp fresh lime or lemon juice
1/4 teaspoon ground cardamom
Peel the fruit. Cut away the membranes of the individual segments with a sharp knife. Collect the peeled segments in a bowl.
Drain off any excess juice from the fruit into a small saucepan. Add the lime juice, honey, and cardamom to the saucepan. Bring to a boil and reduce heat to low. Simmer for 10 minutes and then remove from heat and let cool to room temp. Pour over fruit mixture and gently fold in so that all the fruit is coated. Let stand for 15 minutes or chill until ready to serve.
Serves 4.

I love cardamom and all things citrus. What a beautiful salad and it must taste divine. However - I love Barbie more than anything. My girls are adults and I still find myself swooning in the Barbie aisle, now and then, at the local department store. Love these clips, too!

ReplyDelete1) I love cardamom! In fact, I named my business after it. My little Swedish grandma always baked with cardamom.
2) I have that Barbie book! It's tattered and frayed, but it was my first book and I can't give it up.
3) You have some terrific recipes on here. I have two foodie daughters (one named Sarah) that I'll have to direct to this blog.

ReplyDeleteI made this fruit salad today. It was awesome! I had to substitute the grape fruit with other citrus fruits because it interferes with me medication. I don't eat honey, so I replaced the honey with maple syrup. It was really nice. It'll be especially nice on a summer evening! I'm going to post a veganized version on my blog, if that's ok with you!
