Recipe: Apple Cinnamon Scones

Scones are perfect for breakfast or as a snack.  They are so easy and quick to make as well.  This recipe comes from a wonderful site I found recently called Good Things Catered.  Since finding this site, I've printed recipe after recipe and I can't wait to try them all.

I'm still making lots of apple recipes as the price on apples is still so low.  We love scones and this Apple Cinnamon recipe is delicious.  It has chunks of apple, lots of cinnamon and they're quite moist.  They're so simple to make, that I made them before we went to church so we could have them when we got back.

One thing I've learned about making scones is to not handle the dough too much.  When you put the dough onto the floured surface to bring it together, knead it no more than 5 times, 3 is best.  The instructions in this recipe have you divide the dough into two, knead, then cut.  This makes for smaller sized triangles which is the perfect size for kids.

APPLE CINNAMON SCONES
from Good Things Catered

2 1/4 c. all purpose flour
1/3 c. dark brown sugar
1 Tbsp baking powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
1/4 tsp salt
1 stick (8 Tbsp) butter, chilled and cut into small pieces
1 egg
1/4 c. applesauce
1/4 c. milk
1 tsp vanilla extract
2 c. apples, cored peeled and diced
raw sugar for sprinkling

Preheat oven to 350 degrees and line baking sheet with parchment.

In small bowl, combine egg, applesauce, milk, vanilla, whisk to combine thoroughly and set aside.

In large bowl combine flour, sugar, powder, cinnamon, nutmeg, cloves, salt, and whisk to combine.

Using pastry cutter or two knives, cut butter into flour until all pieces are smaller than pea-sized.  Add apples and toss to coat.

Add wet ingredients to dry and mix in lightly with fork until dough just comes together.

Turn dough out onto well floured work surface and pat into large ball.  Cut dough in half.  Shape half of dough into flat disk shape and cut into 8 slices.

Place on baking sheet and repeat with other half of dough.

Sprinkle tops of scones with sugar and place in the oven.  Bake until turn slightly brown, about 25 minutes.

Remove from oven and let cool on baking sheet for 10 minutes.   Transfer to a wire rack and let cool.

Recipe: Lemon Ginger Scones

I'm still enjoying exploring Scone Recipes to tempt my daughter's scone-loving tummy.  This is another great recipe from the Joy of Baking Website.  These were a bit expensive to make as 1/2 cup of crystallized ginger costs about $8.00 but the taste was worth it.  The lemon and ginger taste is dominant in these scones.  They are nice and crunchy on the outside and  have a soft chewy interior.

SCONES WITH LEMON AND GINGER

Scone Dough
2 cups all purpose flour
1/4 cup granulated white sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into pieces
1/2 cup crystallized ginger, chopped into small pieces (I used my food processor to chop these)
Zest of 1 large lemon
2/3 cup buttermilk

Egg Mixture for Brushing Top of Scones
1 large egg, lightly beaton
1 tablespoon milk

In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.  Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives.  The mixture should look like coarse crumbs.  Stir in chopped crystallized ginger and lemon zest.  Add the buttermilk to the flour mixture and stir just until the dough comes together.  Don not over mix the dough.

Transfer to a lightly floured surface and knead dough gently four or five times and ten pat the dough into a circle that is about 7 inches round and about 1-1/2 inches thick.  Cut this circl in half, then cut each half into 3 or 4 pie-shaped wedges (triangles).  Place the scones on the baking sheet.  Make an egg wash of one well-beaten egg mized with 1 tablespoon milk and brush the tops of the scones with this mixture.

Bake for about 20 to 25 minutes or until golden brown and a toothpick inserted in the middle comes out clean.  Remove from oven and then turn you broiler on high.  Sift confectioners (powdered or icing) sugar heavily over the tops of the scones and place them under the broiler.  Broil for just a few seconds, turning the pan as necessary, until the sugar has meltd and turns golden brown.  Make sure to watch the scones carefully as the sugar will burn very quickly.  Transfer to a wire rack to cool.

Makes 6 or 8 scones.

Enjoy!  Sarah

Recipe: Chocolate Cinnamon Scones

I'm on a real kick here lately making scones :) Our daughter loves them and it's exciting to try variations of a recipe once you find one that works.

These scones weren't as good as the Cinnamon Chip Scones I made in December. The weren't as moist. The cinnamon in these is very very good and the chocolate chips add a bit of chewiness.
These were easy to make, however, the dough was very sticky which made it difficult to knead. I had to add lots of flour while kneading which helped.
This recipe come from the McCormick's website which has lots of yummy recipes to try, along with information on the health benefits of their various spices.

I melted dark chocolate chips to drizzle on top of the scones. I quickly realized I had no idea how to drizzle ;o) It was more like globs on top instead of drizzles. The extra chocolate does taste really good though. I also used dark chocolate chips in the scones instead of the semi-sweet chopped baking chocolate as called for in the recipe.

I'm looking for an Apple Cinnamon scone recipe now. This is the kind my daughter loves to get when she has breakfast at school. Hey, scones I make gotta be better than the school cafeteria's, eh?

If anyone has a good scone recipe for me to try, please link it in the comments below.

Happily submitted to Works for Me Wednesday over at We Are THAT Family. Check out the Lego necklace that she made for her son - so cool!
