I'm always hesitant when I use cayenne because it can be overwhelming. I almost always substitute ground red pepper flakes. This is a nice base recipe. I hope you are having a wonderful day. I ate my fries but was sweating from the heat and spices. I'm going to search other spice options as the potatoes turned out a bit crispy and were good once I got over the heat. I dipped mine in sour cream which did help. He can do wasabi heat though...ooo wasabi fries would be good! I bet if you dipped them in sour cream it would take away some of the heat.
